This post is about food

Every few days I make this awesome smoothie that Jake and I love. Jake is so good at using a straw now and he sucks this smoothie right up!
My friend Jessica created it for her very picky toddler and it helps get lots of nutrients into her body. This is a great smoothie for young children as well as pregnant and nursing mothers.


Jessica has given me permission to share the smoothie ingredients.
1/2 can coconut milk
1 cup yogurt (soy or cow)
1 banana
1/2 cup frozen berries
1/2 cup frozen mangos/peaches or more berries
4-6 leaves raw kale
a handful of baby spinach leaves
1/4 cup parsley
pineapple juice to texture/taste


More food... today's lunch.

Leftover Thai fried rice with tofu and veggies, 2 wraps with hummus, lettuce, tomato, and jalapeno pepper. Blackberries in wax paper bag. Pumpkin chocolate chip muffins. Pumpkin, you say? But that's a fall recipe! I know, I know, but they are yummy and I was in the mood for them and I had a can of pureed pumpkin in my pantry. Thanks to my friend Melisse for the recipe!

Pumpkin Chocolate Chip Muffins
2 cups flour
1 cup sugar
1 Tbsp pumpkin pie spice
1 tsp baking soda
1 tsp baking powder
dash sea salt

1 cup canned pumpkin
2 eggs or egg replacer equivalent
1 stick butter, melted

Beat wet ingredients well and pour into mixed dry ingredients.

Stir in 1 cup chocolate chips.
400 degrees for 15-20 minutes
